3 c. cottage cheese
¾ c. Parmesan cheese
2 egg whites or 1 whole egg
½ tsp. salt
½ tsp. pepper
26 oz. jar spaghetti sauce
9 lasagna noodles
2 (10 oz.) pkgs. frozen chopped spinach
8 oz. mozzarella cheese (reserve a little for topping)
Cook lasagna noodles according to package directions. Mix cottage cheese, Parmesan cheese, egg, salt and pepper. Spread ¼ cup spaghetti sauce in bottom of 9x13-inch baking dish; cover with layer of cooked lasagna noodles. Add half each of cottage cheese mixture, spinach, shredded mozzarella and half the remaining sauce. Continue layering with noodles, cottage cheese mixture, spinach and mozzarella. Top with remaining noodles and sauce. Sprinkle with Parmesan and reserved mozzarella cheese. Cover and bake at 350° for 30 minutes; uncover and bake additional 20 minutes.
