2 c. all-purpose flour
⅔ c. unsweetened cocoa powder
½ c. sugar
2 tsp. baking soda
½ tsp. salt
1 ⅓ c. milk
⅓ c. vegetable oil
2 eggs
1 tsp. vanilla extract
1 c. mini marshmallows
½ c. semisweet chocolate chips
½ c. marshmallow cream
1 T. butter
Preheat oven to 400°. Lightly grease 12-cup muffin pan or line with paper liners. In large bowl, combine flour, cocoa, sugar, baking soda and salt; stir to blend. In medium bowl, whisk milk, oil, eggs and vanilla until smooth. Add milk mixture and mini marshmallows to flour mixture; stir just until evenly moistened (do not overmix). Spoon batter into prepared muffin cups, filling cups about two-thirds full. Top batter with chocolate chips, dividing evenly among muffin cups. Bake muffins until a toothpick inserted in center comes out clean, about 20 minutes. Transfer muffins to wire rack to cool for 10 minutes. Yields one dozen muffins.
Topping
In a small microwave-safe bowl, heat marshmallow cream and butter on high for 10 seconds; stir until smooth. Drizzle over warm muffins; serve.
