Beer-Braised Cabbage

3 lb. cabbage, cut into wedges
1 large red onion, sliced ¼” thick
½ tsp. celery seeds
½ tsp. salt
¼ tsp. pepper
1 c. stout beer
¼ c. melted butter
1 T. packed brown sugar (or more to taste)
6 slices bacon, cooked and cut into 1” pieces
Cooked baby carrots (optional)

Preheat oven to 350°. In large roasting pan, combine cabbage, onion, celery seeds, salt and pepper. Separately, combine beer, butter, and brown sugar. Drizzle over cabbage. Cover tightly with foil. Bake on lower rack 90 minutes or until cabbage is tender. Add carrots 20 minutes before done. Sprinkle with bacon.
